Domaine Villaine,
located in Burgundy at the very top of the Cote Chalonnaise (nestled
between Chassagne-Montrachet and Santenay to the north and Rully and
Mercurey to the south) strives to produce brilliant wines based off
the Aligote grape - in an area where Chardonnay and Pinot Noir usually
rule. The Domaine has been certified organic since 1986, and today
maintains its commitment to this unique grape through the production
of wines that show true character without over-processing.
This is a perfect
seafood wine. It is rich and delicate at the same time, both fruity
and mineral driven. The taste is reminiscent of pears and citrus with
a hint of honey. Its’ refreshing acidity also make it a good match
for goat cheese and firm salty cheeses like Parmesan and Manchego.
If you’re looking for an alternative to Sauvingon Blanc, this is it.
